Astréïa flour is produced in a single pass between the millstones. It therefore reflects the whole germ and kernel of the wheat grain: the guarantee of a nutritious flour.

Unlike a traditional stone mill, the millstones of the Astréïa mill turn slowly and unwind the grain finely without ever crushing it. This process preserves the gluten-starch bonds for bread-making.
