The chef, Patrick Blanchard, is registered with the Chamber of Trades as a charcutier-traiteur (pork butcher and caterer), and therefore has the qualifications required for takeaway sales (compliance with cold and hot chains during the preparation of dishes, cooling methods, rapid cooling cell).
